If you're looking for a quick dessert, try my 4 Ingredient Strawberry Mousse. This easy Strawberry Mousse recipe is made using fresh Scottish strawberries, which I combine with crushed meringues and double cream. I finish the mousse with a little Greek yogurt to balance out the sweetness.

When the sun is shining, I like to keep things simple. I don't want to spend hours in the kitchen, that's when I turn to this easy strawberry mousse recipe. It can be prepared in minutes then all you need to do is leave it to chill for a couple of hours before serving.

I've made this strawberry mousse without gelatin as I prefer a softer set mousse. Just make sure you leave it in the refrigerator for at least two hours to allow it to properly chill and set.

My 4 ingredient strawberry mousse is a great make ahead dessert. I will often make this recipe up the day before, ready to serve straight from the fridge when I have friends over for lunch or dinner, and would rather be outside enjoying the sunshine.

I make this easy strawberry mousse over the summer months when Scottish berries are at their best. I've placed it into individual serving glasses, but you could also use jam jars if you are serving to a larger crowd and don't have enough dessert dishes.

Why you'll love this strawberry mousse recipe

  • This recipe is really quick to prepare in just 15 minutes, then all you need to do is let it chill and set a little in the refrigerator.
  • A great make ahead dessert, it needs to be made in advance so the mousse has time to chill and set in the fridge before serving.
  • Feed a crowd as this recipe is really easy to double up if serving a larger group of diners.

How to make easy strawberry mousse

  • Wash the strawberries, place into a food processor and blend until smooth.
  • Add the meringues and and blitz again to form a smooth, thick liquid.

  • Pour the double cream into a large mixing bowl and whisk until thick, taking care not to go too far or the cream will turn into butter.
  • Pour the strawberry meringue mixture into the whipped cream and gently fold through.

  • Add the Greek yogurt and fold through the mixture again until you have a fairly smooth consistency.
  • Pour the mixture into bowls or glasses and place into the fridge to chill and set for at least 2 hours. Serve straight from the fridge.

Recipe ingredients & substitutions

Strawberry mousse recipe ingredients.
  • Strawberries - I used fresh Scottish strawberries which have the best flavor and are available right on my doorstep from my local strawberry farmers. However, this dessert can be made all year round using fresh strawberries. Don't use frozen strawberries, they will be too wet to use in this light mousse.
  • Meringue - I blended the strawberries with some store bought meringue nests. You will need 100g of meringue which is roughly 8 meringue nests.
  • Cream - I prefer to whip double cream (heavy cream) as it will give you a thicker texture to the mousse. If find whipping cream just too loose and it doesn't set the same.
  • Yogurt - I used Greek yogurt to add a touch of sourness to balance out the sweet flavour in the mousse. Greek yogurt works best as it is naturally thicker than regular natural yogurt which will make the mousse too thin.

Recipe variations

  • I've used fresh strawberries, but you could also use other fresh summer berries. This recipe would work with raspberries and blackberries too.
  • This is a soft set mousse, if you prefer a firmer mousse, you will need to set the strawberry mousse with gelatin.

Serving suggestions

This soft set strawberry mousse is best served chilled straight from the fridge. If you wish to decorate the mousse, I recommending adding a couple of thin slices of strawberry just before serving, so that they don't fall into the mousse, or make it too wet.

Useful hints and tips

  1. This mousse does not have a smooth texture so don't be tempted to sieve the berries, otherwise you will be left with strawberry juice. This will make the mixture too runny and will need to use gelatin to set the mousse.
  2. A food processor is best for getting the meringues blitzed to a smooth consistency with the strawberries.
  3. Take care when whipping the double cream, you want thick whipped cream and not butter.
  4. Use a gentle touch when folding the strawberry meringue mixture through the double cream, you want to keep as much air as possible in the cream.
  5. Don't decorate or garnish the mousse until you are ready to serve, as you don't want the garnish sinking into the soft mousse.

Can strawberry mousse be made ahead?

Yes, this easy strawberry mousse needs to be set in the refrigerator to chill for at least 2 hours, but ideally a little longer. You can make this dessert the day before and store in the refrigerator until you are ready to serve.

Can I use frozen strawberries to make strawberry mousse?

Not in this recipe, as I make this light strawberry mousse without gelatin. Frozen berries contain too much water which would make the mousse wet and runny.

Ingredients

  • 400 g strawberries (stalks removed + extra for optional garnish)
  • 100 g meringue (roughly 8 meringue nests)
  • 300 ml double cream
  • 4 tablespoon Greek yogurt

Notes

Take care when whipping the double cream, you want it to be really quite thick, but don't take your eyes off it as you don't want it to turn into butter.

    I have to admit that I really wasn't convinced about blitzing in the meringues but it worked so well - was delicious as an easy prep ahead dessert for my BBQ!
