4 Ingredient Strawberry Mousse is an quick and easy dessert recipe, combining fresh Scottish strawberries, with double cream and crushed meringues, then finish with a little Greek yogurt to balance out the sweet flavours.
400gstrawberries(stalks removed + extra for optional garnish)
100gmeringue(roughly 8 meringue nests)
300mldouble cream
4tablespoonGreek yogurt
Instructions
Wash the strawberries, place into a food processor and blend until smooth.
Add the meringues and and blitz again to form a smooth, thick liquid.
Pour the double cream into a large mixing bowl and whisk until thick, taking care not to go too far or the cream will turn into butter.
Pour the strawberry meringue mixture into the whipped cream and gently fold through.
Add the Greek yogurt and fold through the mixture again until you have a fairly smooth consistency.
Pour the mixture into bowls or glasses and place into the fridge to chill and set for at least 2 hours. Serve straight from the fridge.
Notes
Take care when whipping the double cream, you want it to be really quite thick, but don't take your eyes off it as you don't want it to turn into butter.Use a gently touch when folding the strawberry meringue mixture through the double cream, you want to keep as much air as possible in the cream.This is a soft set mousse, so if you wish to garnish with strawberries, I recommend doing this just before serving, so that they don't fall into the mousse, or make it too wet.Easy strawberry mousse needs to be set in the refrigerator to chill for at least 2 hours, but ideally a little longer. You can make this dessert the day before and store in the refrigerator until you are ready to serve.
