Buttery, lemony and so very moreish! These little French fancies are a perfect mid morning or afternoon treat. They also make an excellent after dinner petit four.
Generously brush a madeleine tray with melted butter then add a little flour to the tray to completely coat it, tapping out any excess flour.
Whisk together the eggs and sugar in a bowl until light and frothy.
Gently whisk in the remaining ingredients, starting with the flour and baking powder, then once incorporated add the lemon zest and juice.
Set the batter aside to stand for at least 30 minute, or longer in the fridge if making ahead.
When ready to bake, preheat the oven to 200C/180CFan/400F.
Using a dessert spoon, add the batter to the madeleine tray, taking care not to overfill the tray, only about ¾ full.
Bake for 8-10 minutes, or until the mixture has risen a little in the middle and is fully cooked through. Transfer the madeleines to a wire rack and leave for a few minutes to cool slightly.
Serve immediately and enjoy whilst warm.
Notes
For the best batter allow it to sit for at least 30 minutes before baking the madeleines. The batter can be made ahead and stored in the fridge until you are ready to bake.Resting the batter allows the gluten to develop and the flour to properly hydrate, resulting in light, tender, less chewy madeleines.Madeleines are best eaten fresh from the oven, or within an hour of baking when they are at their lightest.Feel free to change out the lemon for orange or blood orange when in season, or mix the citrus flavours, Take care not to add any more liquid than that equivalent to one lemon, which is approx 2-3 tablespoons.
