Place all the ingredients for the marinated chicken into a large bowl and mix thoroughly to combine. Ensure the chicken is completely coated with the marinade.
Cover the bowl and place in the fridge for at least 30 minutes, but ideally 6-8 hours. The longer the marinate the better the flavour.
When ready to cook, preheat the grill to medium high and line a baking tray with kitchen foil.
Thread the pieces of chicken onto the skewers and lay on the baking tray.
Place the tray in the oven and grill the chicken for 10-15 minutes until starting to brown and catching a little on the corners.
Remove from the oven and turn the chicken over. Brush over any leftover marinade and place back under the hot grill.
Grill the chicken for a further 10 minutes until cooked through.
Remove the chicken kebabs from the oven and serve immediately.
Notes
The spices in this dish are very easily adapted. If there is something that you don't like, then leave it out, or add something else.If you are using wooden skewers, remember to soak them in cold water for an hour before you plan to cook with them. Soaking the skewers stops them from burning under the grill.If you have the barbecue on, these kebabs are great cooked over charcoal.
