I really can’t believe we are midway through November and have started the Christmas countdowns already. This past month since we’ve last hosted #CookBlogShare has been a bit of a blur.
Here in the Northeast of Scotland we had 2 weeks of school holidays, which meant a bit more time with our families and enjoying a wee break from the recipe testing and photographing. But it was straight back to it for us with two Supperclubs this month, both fully booked well in advance.
As this months menu for our Supperclub involved chicken as the main option it seemed fitting to stick with that as the theme for this week. There were so many submissions to #CookBlogShare it was difficult to narrow them down. Without further ado, lets see what everyone has been making.
DELICIOUS CHICKEN RECIPES INSPIRED FROM AROUND THE WORLD FOR #COOKBLOGSHARE 2019 WEEK 46
Whole Roasted Chicken
Who doesn’t long for a roast chicken with all the trimmings for a Sunday dinner? There’s just something about the classic roast chicken and this one from Jenny at Apply to Face takes the effort away with her Slow Cooker Roast Chicken. Set up your slow cooker, get out for a lovely Sunday walk or activity with the family and come home to the house smelling amazing.
If its a whole roast chicken you’re after then for a different delicious chicken recipe then head to our own Chicken and Squash Curry for a hit of spice.
Chicken Pie
There are usually always with leftovers following a roast chicken dinner. What better way to use up those than in a warming chicken pie. Cat over on Curly’s Cooking uses chicken thighs in her Chicken and Chorizo Filo Pie, but suggests leftover chicken would works as well. As well as my love for chorizo the use of filo pastry to lighten this dish entices me.
If filo is not your thing and you still want a more traditional pie then head over to our Leftover Turkey Pie, perfect for Christmas or Thanksgiving leftovers or using up that leftover chicken from the Sunday roast.
Chicken Stew
There are so many variations and probably arguments as to what makes a stew. Search anywhere for a stew recipe and the majority come back with ideas for beef stew. However, chicken also makes a delicious stew. Cooking with Ewa shares her love of Peruvian food in many ways and this Peruvian Aji de Gallina (Peruvian Chicken Chilli Stew) adds a nice change to the classic flavours. This dish includes a creamy sauce made from Peruvian chilli, parmesan, pecans and milk. It sounds delicious and one for my list to try.
Keeping with traditional dishes, is there anything more classic than the French Coq au Vin? Our simple recipe is packed with fresh garden herbs and of course the prerequisite red wine.
Chicken Stir Fry
Midweek is all about convenience and quick meals for most people. Families are busy and but need a hearty quick dinner that is also packed with vegetables. This Peruvian Chicken Stir Fry from Cooking with Ewa does just that. Bright and bold colours make it tempting on the senses.
Lesley’s daughter Catherine also has a love of chicken stir fry, which is why this Asian inspired one of ours is dubbed Catherine’s Chicken & Cashew Nut Stir Fry.

Great recipes! I really liked the chicken stir fry recipe, which can be made with left over rotisserie chicken as well. Cooking can be a great way to reduce stress in these lockdowns, and keep yourself busy and healthy.
